Our traditional nova begins with salt, then we cold-smoke the salmon over natural wood chips at very low temperatures until each fillet is fully cured and ready to eat.

Shelf life: 18 months frozen vacuum packaged frozen at 0ºf or below.
Thawed shelf life: 30 days refrigerated at 38ºf or below.
Once refrigerated package is opened, item must be consumed in 5 days.
